Nut Milk


Since cutting down on dairy, nut milk in my coffee and tea is my new go to. With only myself to feed however, a large bottle of nut milk tends to go to waste. After searching for store bought options I found that most are riddled with additives and sweeteners. While the ones that aren't, are either too large in quantity, or really expensive. So what to do? Make my own of course! This recipe can be made up to the quantity that you please, and will keep for 3-4 days in the fridge. Ingredients: (Makes 2 cups) 1 cup natural nuts (I like to use a mix of almonds, walnuts, hazelnuts, cashews and brazil nuts) 3 cups water Cinnamon Nutmeg 2 cups water A cotton or muslin cloth/ sieve will also be needed Place your nuts and first measure of water into a bowl and cover. Leave to soak overnight (this is also known as 'activating' the nuts, which in a nut shell (haha) removes natural enzyme inhibitors. Read more HERE). Take your nuts, and rinse them well under cold water. Place in a blender with the spices and second measure of water. Blend until smooth. Set up your sieve over a large bowl or jug, and line it with your cloth. Pour the nut mixture into this, and then strain (Make sure you get out every precious drop you can, the last squeeze is the best of the milk!). Store in an airtight container in the fridge and enjoy! Ps. What to do with the nut pulp? Add it to a cake, pancakes, cookies, or your morning porridge. Waste not want not!
