Simple Berry Chia Jam

The title really says it all when it comes to this jam recipe.

Now that I am living free of refined sugar, jam is really off the permitted list of sweets. That is until this jam... Depending on what you favour - you can easily sweeten or tart this jam up to your liking. I tend to prefer the tart side of things, with an underlying sweetness. Spread it all over everything friend. Because it is good for your body and your soul. Ingredients: (Makes 1 cup of jam) 2 cups frozen raspberries 1/3 cup water 1 teaspoon honey 1 tablespoon chia seeds Add your berries, water and honey to a small saucepan, and on a low heat, simmer until the berries are soft and the honey has disolved. Mash with a fork as you go the break the berries down. Take off the heat and mix in the chia seeds. Pour into a small airtight container and cover. Leave to stand for a minimum of an hour. Enjoy :) Notes: - Use any berries you like and get creative with flavours. - Use a sweetener of your choice, maple syrup would be fantastic! - Jam keeps for 2-3 days in the fridge.
